I can relate: Dad's First Bedtime

Tonight will be Zack's first official time putting Greyson to bed on his own. Including bath time and teeth brushing and lotioning and reading books. Greyson is almost 21 months old and yes, I was an over protective mother and yes, even with my own husband. I didn't want anyone to touch my baby. I'm proud to say I've relaxed some now though I admit it's been mostly out of necessity. But I'm happy that I've had to do it because it really is nice to have help and I know that with Charli's impending arrival I'm going to need it more. And I think (and am hoping and praying) that I won't be as mama-bear-crazy-don't-touch-my-baby with this one, because I know babies are resilient and more than likely they will be just fine with someone else for a few.
Anyway, this is a quick post to say that I will have a report on how things go tonight for tomorrow. I'll try to sneak in a few pictures though pictures of my husband are difficult to catch :)

Easy Peasy Toddler Food: "Pizza"

Getting my son to eat is sometimes super hard. I don't know why they are born with an aversion for vegetables, or turn their nose up at protein packed chicken, but he sometimes just won't eat! Drives me crazy! Luckily there are a couple of tastes that he loves that I can fall back on: cheesy, tomato saucy and cereal. We are going to focus on the first two - cheesy and tomato saucy.

This is a super easy and really flexible recipe. I'm hesitant to even call it a recipe since its basically three food items. It's not fancy and I doubt I'm the first to do it, but sometimes this simple stuff gets overlooked.

Easy Peasy Toddler Food: "Pizza"

Two slices of bread - any bread! I'm using soft and smooth whole wheat
Tomato sauce - pizza sauce, spaghetti sauce, left over sauce from the pasta the night before. I'm using some pizza sauce I had.
Cheese - any cheese! I happen to have some mozzarella but I've even used sliced cheddar and Greyson likes it all the same.
Optional: Vegetables - I hide spinach under the cheese a lot, though I didn't do it this time. Use zucchini or bell peppers or whatever you'd like. But tomato sauce could be enough veggies.
Optional: Meat - I didn't use meat this time but some ground beef might be a nice touch.

Preheat oven or toaster oven to 350 degrees F

Then assemble your pizzas. Here are some helpful pictures in case you get lost ;)




Either place the pizzas on a cookie sheet or you can place them directly on the oven rack. Bake for about 10 minutes at 350 or until the cheese is melted and the bread is a little toasted.

 Tip: I like to cool them on a wire rack because the bread will sweat some as it cools (steam) and can make the bread soggy if it's cooled on a solid surface. No big deal if you don't have a wire rack, at least cool the pizzas on some paper towels or a clean dish towel.

"Better than the Dough" Chocolate Chip Cookies

I love chocolate chip cookies, but always find that I'm disappointed after the cookies were baked because I realized that I liked the dough better! I'm not sure exactly why the taste changes. I think the recipes on the back of the bag of chocolate chips are decent recipes if you're going to eat all the cookies fresh. But if you wait a day or two they are too hard, stale, and really just aren't as good as you hoped. So I searched and searched for a good, chewy but not crumbly soft cookie, and about a year or two ago I found it! I think what makes these cookies so deliciously chewy is that it uses more brown sugar than white, a whole tablespoon of vanilla, and one egg plus an additional egg yolk. If you don't know how to separate an egg white from an egg yolk to get that second yolk, I've done the searching for you and found a helpful and detailed YouTube video here. So behold, my "Better than the Dough" Chocolate Chip Cookies!

(note: I'm a normal person. I don't have a beautiful kitchen, or matching mixing bowls, or even an electric mixer. I have thrift store mixing bowls, laminate counters, and just normal silverware spoons. So, no special gear needed as long as you can get the job done! Also, I don't have a photographer's camera that takes gorgeous pictures of food, just a normal point and shoot. So give me some slack on my equipment, and focus on the cookies - they're worth it!)

"Better than the Dough" Chocolate Chip Cookies
2 cups flour
1/2 tsp baking soda
1/2 tsp salt
3/4 cup melted butter
1 cup brown sugar, packed
1/2 cup white sugar
1 Tbsp vanilla extract
1 egg
1egg yolk
2 cups chocolate chips



Preheat oven to 325 degrees F.

Mix together in medium bowl flour, baking soda, and salt.
In second, larger bowl mix melted butter with brown and white sugar. Mix well. Add vanilla, egg, and egg yolk.

Pour flour mixture into sugar mixture, and mix well.


Fold in chocolate chips!


Then drop by tablespoon full onto ungreased non-stick cookie sheet. Space approximately 2" apart. My sheet holds 12 cookies.


Bake for 15-17 minutes, or until golden brown. For me, 15 minutes is perfect. Remove from oven and let cool on cookie sheet for a couple minutes. Then transfer to wire rack and cool completely (and by completely, you know I mean just so it's not scalding hot because I know you'll dive into these ASAP! Besides, what's yummier than still-warm-from-the-oven cookies??)


Then all that's left to do is enjoy! Store in an air tight container or gallon freezer bag. Personally I store mine in a gallon freeze bag and freeze what's not eaten immediately. They stay SO fresh that way forever. Then when you're ready to eat just take what you want out of the freeze and thaw for 15 minutes, or I also like to nuke mine in the microwave for approximately 15 seconds and then it's like they're warm from the oven all over again. Mmmm...

If you live in a high altitude, don't sweat it and don't bother to change a thing. I live at 6500' and these come out fine without adjusting anything. In fact, I never ever adjust for altitude with anything.

Hello!

I have decided to start an entirely new blog. One where I could talk about my life. But to do that I had to sit back and examine exactly what my life consists of. Let's make a list:
Diapers
Dinner
Play dates
Bills
Saving money (trying to)
Cleaning (admittedly minimal)
Friendships
My family
I'm sure that list will grow. But those are the highlights. I'm not particularly crafty though I can follow directions. I'm not really creative though I have quirky taste. I'm not really really good at any one thing. My friend at Sew Ronimo is a super seamstress, my friend at See Sondra Slim is going through life altering changes in the most inspiring positivity. So here I am with nothing in particular going on except my stay-at-home-momness. There was my aha! moment. Im a SAHM, a housewife! And I know I'm not alone in being less than Pinterest-worthy in abilities. So my new blog is about everything a mom and wife or girlfriend or domestic goddess or just about anyone could and would need to know. Most of it will be ideas others have shared or ones I've found. Tips and tricks in all aspects of domestic-dom. I'll share what I know and beg for advice on other things. Yes, I'm a Rookie Housewife. I worked full time until my son was born and had a part time job afterwards. But now I'm strictly a SAHM to an awesome 21 month old boy Greyson and a daughter-to-be due in July to be named Charli. I have a lot to learn and a lot to offer after I learn it.
So this is my first post, a friendly Hello and introduction. Hopefully by tomorrow I can have my first official, informational, and instructional blog on my Chocolate Chip Cookies. Ones I like to say are "better than the dough" which is saying something because I never like the actual cookies more than the dough :) I took pictures and everything, so some love would be much appreciated!
